Honey Sweetened Lemon Curd

I regularly make this curd as a cake filling or just on its own. I slathered it on a sponge cake last week and it was a definite hit!

You can make this recipe dairy free by substituting ghee for the butter. This curd was just as delicious when I used ghee instead.

Lemon Curd

3 large eggs
1/3 cup honey
Grated zest of 1 lemon
1/3 cup strained lemon juice
6 tablespoons butter or ghee
Pinch of salt 

Whisk together eggs, honey and lemon zest in a medium saucepan. Then add lemon juice, butter (or ghee) and salt. Cook over a medium-low heat until the butter is melted and mixture is thickened. Strain. Let cool and refrigerate to thicken.

This recipe easily doubles if more is needed!

I've recently been honing my skills at piping, specifically with buttercream. As Valentine's Day is quickly approaching, I thought it would be a great excuse to test out piping some roses.

I used a Wilton 104 tip for these roses and was quite pleased with how they turned out. I am slowly learning the various techniques and find it quite a relaxing hobby.

After happily stumbling upon the TV show "The Great British Bakeoff," I was left feeling inspired to recreate one of Mary Berry's recipes. I had just recently inherited a well-loved bundt pan from my grandma, so the timing couldn't have been more perfect to try out this recipe.

With Valentine's Day just around the corner, this cake could prove the key to ensnaring a secret admirer. I have found all too often that food is truly the way to a man's heart.
